I (Bill) like Gazpacho a lot. We have home-cooked hot soup almost daily so I did not take a natural liking to the chilled soup at first. It felt off.
Soup away from home is usually a far cry from the flavourful, nutritious taste that I am so used to at home. So Gazpacho has, surprisingly, reminded me of home soup with its great flavour and nutrients.
In Europe, chilled soup is very popular in summer and highly honoured for its high fibre and organic nutritional values. In fact, gazpacho is often prepared when Europeans feel sick or have a hangover.
