Hence, our recipes are created with a priority in mind: that our food should taste delicious when they are freshly made, or eaten anytime within the edible time window, despite being frozen or chilled then thawed or reheated.
We researched on how to keep proteins juicy, on how the different ingredients are best integrated, on the different cuts of meat for different types of cooking, the play in temperature and the time tweaked in preparing the food. We also made extra effort to pack our food, sauces and condiments separately so that they will taste fresh and the texture can be differentiated when you eat them.
After many trials and errors, we developed our little blueprint.
