Char-Smoked Ceviche SIP Pasta
Upgraded: Fish is removed and replaced with Japan's firefly squid (Hotaru Ika). Although this squid is crunchy & small, it has a filled sac of tender and umami roes (in season annually from March to May).
Char-smoked just like our first Ceviche creation. Broth is simmered with fish, sea prawns' heads, lemon, wine, asian herbs, chilli & onion. An appetising stunner.

SIP are laid on a bed of Risoni, & organic farro which is usually neglected because it is pricey and difficult to cook. Farro gives an amazing al dente bite when handled well and is a highly nutritious, low GI grain high in fiber, iron, protein and magnesium, providing a lot of health benefits for the heart and brain. Sauteed with arugula salad, peppers, cucumbers and tomatoes.
